Nowadays the oil is considered one of the basic elements of the famous Mediterranean diet, that satisfies both the pleasures of the palate and love for a healthy and balanced feeding.
Oil production is the principle activity of the area. We have been cultivating Olive trees for generations, and today we start a little project to grow up greens and fruits without using chemical matters only for our guests: tomatoes, salad, basilic, beans, onions and many others are the solid base of our cuisine.
Our oil still keeps the original taste, because it is produced according to an old tradition.
They are cultivated without using anti-parasitic or chemical fertilizers, so that the olives are guaranteed as absolutely genuine.
The harvest is hand-made with a slow and expensive technique that is how ever necessary in order to warrant the proper ripening of the fruits.
Just milled oil appears opaque, dense and has an intense and
absolutely unmistakable aroma. With time passing the heaviest particles make
a sediment, leaving so to the oil the transparency we usually see.
